- 1/4 cup stevia
- 8 oz sugar-free apricot jam

- Cutter any shape you prefer
- Plastic wrap

- Parchment paper
Preparation of the Sugar-Free Apricot Tart
In a bowl, pour the flour and stevia and mix. Then add the butter at room temperature (cut into small pieces) and start mixing with your hands to combine.
Now add the egg yolks and help yourself with a spoon to mix until you get a crumbly mixture. Pour this mixture onto the work surface and work it with your hands until you get a smooth ball. Wrap it with plastic wrap and refrigerate for 30 minutes.
After resting in the fridge, roll out the dough to about 1/8 inch thick. Cut a circle with an extra 1/2 inch border from the pan (so if the pan is 8 inches, you should get a circle with a 8.5-inch diameter) and place the dough in the pan, being careful to get the edges at the same height.
Fill the tart by spreading the jam. Decorate with the remaining dough by making stripes and small shapes for decoration. Preheat the oven to 428°F, and when hot, bake for a total of 25 minutes, uncovered for the first 20, then cover the pan with parchment paper for the last 5 minutes (to prevent the tart from getting too dark). Once cooked, take the sugar-free tart out of the oven, let it cool, and enjoy!
Tips
With the leftover egg whites, you can make meringues!
If you want to make your work easier, you can use a stand mixer with a paddle attachment to knead the dough!
