Ingredients for the Sugar-Free Tart

  • 3 egg yolks (from XL size eggs)
  • 1 and 3/4 cups g all-purpose flour
  • 1/2 cup g butter (at room temperature)
  • 1/4 cup g stevia
  • 1 cup g sugar-free apricot jam

Preparation of the Sugar-Free Apricot Tart

  • In a bowl, pour the flour and the stevia and mix, then add the butter at room temperature (cut into chunks) and start mixing with your hands to blend.

  • Now add the egg yolks and using a spoon, mix until you get a sandy mixture, pour this mixture onto the work surface, and work it with your hands until you obtain a smooth dough. Wrap it with plastic wrap and put it in the fridge to rest for 30 minutes.

  • After resting in the fridge, roll out the dough to about 1/8 inch thickness, cut out a circle with an extra 1/3 inch border around the pan (so if the pan is 8 inches, you should get a circle of 8.3 inches in diameter) and lay the dough in the pan, making sure to keep the edges at the same height.

  • Fill the tart by spreading the jam, decorate with the remaining dough by making strips and small shapes for decoration, preheat the oven to 428°F, and when hot, bake, cook for a total of 25 minutes, the first 20 uncovered, then for the last 5 minutes cover the pan with parchment paper (to prevent the tart from getting too dark), once baked, remove the sugar-free tart from the oven, let it cool, and enjoy!
