Ingredients for the Sugar-free Two-tone Bundt Cake
- 4 large eggs (large size)
- 3 1/4 cups all-purpose flour
- 2.1 oz stevia
- 7 oz ricotta cheese
- 1 1/2 tbsps extra virgin olive oil
- 1 packet baking powder
- 1/4 cup unsweetened cocoa powder
- 9 tbsps water

How to Prepare the Sugar-free Two-tone Bundt Cake
Place the eggs, stevia, ricotta, 7 (of the 9) tablespoons of water, and oil in the bowl of a stand mixer (or in a separate bowl if using electric beaters), attach the wire whisk and mix at speed 4 for 5 minutes, then stop.
In a separate bowl, mix the flour and baking powder and add them to the stand mixer bowl, turn it on at speed 4 for 6/8 minutes, then stop and divide the dough. Place half in a bowl and in the remaining dough in the stand mixer, add the unsweetened cocoa and the remaining tablespoons of water, turn on the stand mixer again at speed 2 for 2 minutes.
Grease and flour a 10-inch bundt pan, pour the white batter on one side, and the cocoa batter on the other side. Use a spatula to level it so you have a perfectly half-and-half two-tone bundt cake (it needs to be leveled with the spatula because it’s a very thick batter, which is normal and right).
Preheat the oven to 428°F and when hot, bake for 35/40 minutes (towards the end of baking, always perform the toothpick test as ovens may vary) and once cooked, remove the bundt cake from the oven, let it cool completely before removing it from the mold and serving it, enjoy!

Tips
This sugar-free two-tone bundt cake is super soft and stays soft if stored in a freezer bag.
You can also slice it and freeze the slices so that you always have a ready supply, just a few minutes in the oven, and it will be like freshly made!
This recipe comes from my need as a type 2 diabetic to have something for breakfast or a snack that wasn’t industrial and sugar-free, but I assure you that everyone loves it!
