Sugar-free two-tone bundt cake, perfect for breakfast, snacks, and treats to satisfy everyone’s tastes, half white and half cocoa for a mix that will surprise you! Soft and super tasty even though it’s sugar-free, you won’t waste a crumb! I used a large mold (10 inches) but if you want higher slices, use a mold of 8.5 inches or 9.5 inches!

Ingredients for the Sugar-Free Two-Tone Bundt Cake
- 4 eggs (large size)
- 3 cups all-purpose flour
- 1/4 cup stevia
- 3/4 cup ricotta cheese
- 4 tsp extra virgin olive oil
- 1 packet baking powder
- 1/4 cup unsweetened cocoa powder
- 9 tbsp water

Preparation of the Sugar-Free Two-Tone Bundt Cake
Place the eggs, stevia, ricotta, 7 (of the 9) tablespoons of water, and oil in the bowl of the stand mixer (or in a separate bowl if using electric beaters), attach the wire whip and run at speed 4 for 5 minutes, then turn off.
In a separate bowl, mix flour and baking powder and add them to the stand mixer bowl, run it at speed 4 for 6/8 minutes, then turn off and divide the batter. Put half in a bowl and add the cocoa powder and the remaining tablespoons of water to the remaining batter in the stand mixer, run the mixer again at speed 2 for 2 minutes.
Grease and flour a 10-inch bundt cake pan, pour the white batter on one side, the cocoa batter on the other, and level it with a spatula to have a perfectly divided two-tone bundt cake (it needs to be leveled with the spatula because the batter is very dense, which is normal and correct).
Preheat the oven to 428°F and when hot, bake, cook for 35/40 minutes (towards the end of the cooking time, always do the toothpick test because ovens are not all the same) and once cooked, remove the bundt cake from the oven, let it cool completely before removing it from the mold and serving, enjoy!

Tips
This sugar-free two-tone bundt cake is super soft and stays soft if stored in a freezer bag.
You can also slice it and freeze the slices so you always have a ready supply, just a few minutes in the oven and it will be like freshly made!
This recipe was born from my need as a type 2 diabetic to have something for breakfast or a snack that wasn’t industrial and was sugar-free, but I assure you that everyone loves it!
