  • 1 egg
  • 1 2/3 cups low glycemic index flour
  • 2/3 cup water
  • 2 tbsp water
  • 1.41 oz stevia
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tbsp unsweetened cocoa powder
  • 1 tsp baking powder

Steps to Make Sugar-Free Two-Tone Muffins

  • In a bowl, pour the egg, oil, stevia, and water (140 g) and mix well with the spoon until all the ingredients are well blended.

  • In a separate bowl, sift together flour and baking powder and mix.

  • Add the dry ingredients to the liquid mixture, mix well with the spoon until you get a smooth batter without lumps.

  • Divide the batter evenly into two bowls.

  • In one of the bowls, add the cocoa powder and 2 tablespoons of water, mix the batter well.

  • Oil the muffin pan and dust with flour, pour 1 tablespoon of white batter and 1 tablespoon of black batter into each mold until the ingredients are used up.

  • Now take a toothpick and slightly swirl the batter in each mold to create a marbled effect.

  • Preheat the electric oven (static) to 428°F, and when hot, bake, cook for 20 minutes, then remove, let cool, remove from the pan, and enjoy!
