Sugar-Free Water Cake

Sugar-free water cake, a cake soft and fluffy like a cloud, perfect for everyone’s breakfast or snack! You can also give it to children as a school snack. This cake is delicious on its own but can also become an excellent base to fill, unleash your creativity in the kitchen!

Ingredients for the sugar-free water cake

  • 2.5 cups low glycemic index flour
  • 2/3 cup water
  • 2 tbsp extra virgin olive oil
  • 1/3 cup stevia
  • 2 eggs (medium size)
  • 1 packet baking powder
  • 1 tsp stevia (to blend and use instead of powdered sugar)
  • as needed oil and flour (for the mold)

Preparation of the Sugar-Free Water Cake

  • In a bowl, work with a spoon for a few minutes the eggs with the stevia, water, and oil (it really takes just 2 minutes).

  • Add flour and baking powder previously sifted together, pour them into the liquid mixture a little at a time and mixing from bottom to top, proceed this way until all ingredients are used up, you should obtain a thick and lump-free mixture.

  • Lightly oil and flour the pan, pour the batter and gently tap on the bottom, set the oven to 392°F, and when it is at temperature, bake.

  • Bake for 40 minutes and always check towards the end of cooking by doing the toothpick test because each oven is different from the other, once the cake is well cooked, take it out of the oven, let it cool, and once cold, remove it from the mold.

  • Before serving the sugar-free water cake, blend 1 teaspoon of stevia until it becomes impalpable and sprinkle it on the cake as if it were powdered sugar, serve and enjoy, bon appétit!

Advice

You can flavor the sugar-free water cake with grated lemon or orange peel (obviously untreated).
