Ingredients for the sugar-free water cake
- 2 1/2 cups all-purpose flour
- 1/2 cup water
- 2 tbsps extra virgin olive oil
- 1/4 cup stevia
- 2 eggs (medium size)
- 1 packet baking powder
- 1 tsp stevia (to blend and use instead of powdered sugar)

Preparation of the Sugar-Free Water Cake
In a bowl, work the eggs with stevia, water, and oil with a spoon for a few minutes (2 minutes are enough).
Add sifted flour and baking powder together, gradually pour them into the liquid mixture while mixing from bottom to top, proceed this way until you finish all the ingredients, you should get a thick and lump-free mixture.
Lightly oil and flour the baking pan, pour the batter, and tap lightly on the bottom, set the oven to 392°F and bake when it’s at temperature.
Bake for 40 minutes and always check towards the end of baking by doing the toothpick test because each oven is different, once the cake is well cooked, remove it from the oven, let it cool down, and once cool, remove it from the mold.
Before serving the sugar-free water cake, blend 1 teaspoon of stevia until it becomes fine and sprinkle it on the cake as if it were powdered sugar, serve and enjoy, bon appétit!

Advice
You can flavor the sugar-free water cake with grated lemon or orange peel (obviously untreated).
