Preparation of Sautéed Zucchini and Onions
Wash the zucchinis, dry them, remove the scraps, and weigh them. Cut them in half lengthwise and then into slices about 1/4 inch thick, add them to a pan.
Clean the onion, weigh it, chop it roughly and add it to the pan with the zucchinis.
Add water, oil, a pinch of salt, and pepper (amount to taste) to the pan, mix well, and place over medium heat.
Cook over medium heat for 30 minutes, stirring often with a wooden spoon. By the end of cooking, the water will have evaporated, and the zucchini and onion will be ready to enjoy! Delicious both hot and cold!
NOTES
Once cooled, you can store the zucchini and onions in the fridge in an airtight container for 2 days. This way, you’ll always have a ready side dish!
