Ingredients for Sautéed Zucchini and Onions
- 4 cups zucchini (weighed already cleaned)
- 1 cup yellow onion (weighed already cleaned)
- 1 glass water
- 1 tbsp extra virgin olive oil
- 1 pinch fine salt
- mixed peppercorns (freshly ground, quantity to taste)

Preparation of Sautéed Zucchini and Onions
Wash the zucchinis, dry them, remove the waste parts, and weigh them. Cut them in half lengthwise and then into slices about 1/4 inch wide, place them in the pan.
Clean the onion, weigh it, cut it into chunks, and add it to the pan with the zucchinis.
Add water, oil, a pinch of salt, and pepper (quantity to taste) to the pan, mix well, and place over medium heat.
Cook over medium heat for 30 minutes, stirring often with a wooden spoon. At the end of cooking, the water will have evaporated, and the zucchinis with onions will be ready to enjoy! Delicious both hot and cold!
NOTES
Once cooled, you can store the zucchinis and onions in the fridge in a container with an airtight seal for 2 days, so you’ll have a ready side dish!
