Ingredients for Tasty Baked Chicken Breast

  • 8.1 oz chicken breast (sliced)
  • 2 cups zucchini
  • 8 cherry tomatoes
  • 1.4 oz breadcrumbs
  • 1 teaspoon garlic powder
  • to taste salt

  • 4 tablespoons extra virgin olive oil

Preparation of Tasty Baked Chicken Breast

  • Cut the chicken breast into chunks about 1 x 1 inches (just to give you an idea of the size) and place them in a large bowl.

  • Wash and dry zucchini and cherry tomatoes, remove the waste parts and then slice the zucchini into rounds and halve the cherry tomatoes, add them to the bowl.

  • Season the chicken and vegetables with a pinch of salt and 2 tablespoons of oil, mix well, then add the breadcrumbs and garlic powder and mix until everything is well coated with breadcrumbs.

  • Line a baking tray with parchment paper, pour in the breaded chicken and vegetables, spread them out so they are not too close to each other.

  • Season with the remaining oil, a pinch of salt, and pepper to taste, heat the oven to 482°F, bake and cook for 20 minutes, when it’s nicely golden, remove from the oven and enjoy, great both hot or cold! Before serving, you can garnish with fresh basil if you like!
