Ingredients for Tombstone Cookies
- 2 cups low glycemic index flour
- 1/2 cup coconut oil
- 1/4 cup stevia (or 1/2 cup erythritol)
- 1 egg (medium size)
- 1 pinch baking powder
- 1 pinch fine salt
- 1 packet vanillin
- 2 cups all-purpose flour
- 1/2 cup butter (cold from the fridge)
- 1/2 cup sugar

Procedure for Tombstone Cookies (same for both versions)
In the mixer bowl, pour the coconut oil, flour, and stevia, attach the paddle and run at speed 4 for 10 seconds then stop.
Now add the egg, the vanillin, and the pinch of salt to the bowl, run at speed 4 for a few seconds until a crumbly mixture forms.
Pour the mixture onto the pastry board, quickly shape it into a ball, wrap it in plastic wrap, and place it in the fridge for 1 hour (the longer it rests, the better it is, even overnight if possible!).
After resting in the fridge, take the shortcrust pastry, roll it out to a 1/5 inch thickness, and take pieces of dough, put them in each mold, and press them well to adapt to the mold (until finished).
Preheat the oven to 350°F, bake and cook for 20 minutes, once baked, let them cool completely before removing them from the mold.
Once removed from the mold, decorate them, if you like, with a red food pen.
