Notes and Variations
If you prefer a softer glaze, you can add 2 tablespoons of heavy cream or 1 1/2 tablespoons of butter to the white chocolate (in this case, the glaze will never become solid but will remain creamy and soft), you can add 3 tablespoons of rum to the batter if you like liqueurs, you can soak the cake with cherry syrup.
If you don’t like sour cherries in syrup, you can replace them with fresh fruits of your choice such as pieces of apricot, peach, plum, grapes, melon, banana, or apple, depending on the season.
If you don’t want to use fruit at all, you can garnish with dollops of whipped cream, you can also add more under each cherry.
You can color the white chocolate pink using cherry syrup, it will make the cake even more spectacular!
