Those who follow me know I am not vegan but due to my dairy intolerance, I sometimes prefer vegan foods without having to go crazy reading product labels to see if there is any dairy, so I created this super quick and easy recipe using products with the vegan ok brand. You’ll only need a bowl and an immersion blender; no cooking required! Vegan lentil cream that is perfect to spread on toasted croutons!

Ingredients for the Vegan Lentil Cream
- 1 1/4 cups Pre-cooked Lentils
- 1 oz Walnuts (toasted)
- 1 tbsp Extra virgin olive oil
- 1 pinch Salt
- 1 tsp Chives (dried or fresh, I used dried)
- 1 pinch Garlic powder
- 1 pinch Black pepper (freshly ground)
- 1 Whole grain bread (enough for 2 slices per guest)

Preparation of the Vegan Lentil Cream
Drain the pre-cooked lentils well from their liquid in the can and rinse them under running water for 2 minutes, blot them well with a paper towel.
In a bowl, pour the drained lentils, garlic powder, salt, pepper, chives, toasted walnuts, and oil, and with the help of an immersion blender, blend everything well until you get a thick, lump-free cream (to prevent splattering lentils all over your kitchen, cover the bowl with cling film beforehand, inserting the immersion blender from one side).
The vegan lentil cream is ready to be used, toast the whole grain bread on a griddle cooking it for 3 minutes on each side, then spread the cream with a spoon and serve sprinkled with more chives.
If you don’t use the vegan lentil cream immediately, you can store it in the fridge in an airtight container, you can also prepare it a day in advance to have it ready to serve at the moment.
