Ingredients for Waffle-misù
- 9 oz ready-made waffles (I used 18 small ones (this way you can also make single servings with 3 waffles each))
- 5 oz Greek yogurt
- 4.5 oz mascarpone
- 0.7 oz sugar
- 1 tbsp peanut butter
- 2 coffee (espresso, 2 tablespoons for the cream, the rest for soaking)
- to taste powdered sugar (for decorating)

Preparation of Waffle-misù
Start by making the two espressos (without sugar) and set them aside to cool.
In a bowl, pour the mascarpone, yogurt, sugar, peanut butter, and 2 tablespoons of the now cooled coffee, mix with a spoon until you obtain a soft and homogeneous mixture.
Divide the waffles so you have enough to make 3 layers (I used 18 small ones to make 6 portions of 3 layers each).
In a baking dish, place the first layer of waffles, soak with half of the coffee, and spread half of the cream on top, cover with a second layer of waffles, soak with the remaining coffee, and spread the remaining cream on top, finish with the last layer of waffles.
Cover the dish with plastic wrap and let it rest in the fridge for at least 2 hours before consuming (it’s also great if made the day before for the next day).
Before consuming, take it out of the fridge, remove the plastic wrap, slice it, and place the individual portions on plates and decorate with plenty of powdered sugar, then bring to the table and enjoy, I assure you that you have never tasted a tiramisu as good as this!
