Ingredients for Whole Buckwheat Shortcrust Pastry
- 2 cups cups whole buckwheat flour (whole)
- 1 egg
- 2 tsps gluten-free baking powder
- 6 tbsps tbsps butter (or alternatively 5 tbsps coconut oil)
- 3 tbsps tbsps water
- 6 tbsps tbsps stevia
- 1 tbsp lemon zest (grated)

Preparation of Whole Buckwheat Shortcrust Pastry
Start the preparation by putting the flour, baking powder, and stevia in the chopper and blend for 10 seconds, this way it will be a more uniform mixture.
Now add the egg, water, and grated lemon zest, blend for 1/2 minutes and voilà the job is almost done!
Pour the buckwheat shortcrust pastry onto a lightly floured board, shape it into a dough ball with your hands (initially it crumbles slightly but handling it a few seconds will compact it), the shortcrust pastry is now ready.
If you want to use it immediately, proceed to roll it out gently with a rolling pin, if instead you wish to use it later wrap it in cling film and let it rest in the fridge where you can store it for up to 2/3 days.
WARNING: if you store it in the fridge, take it out at least 30/40 minutes before using it, if manipulated too cold it breaks.
Tips
For baking cookies, roll out the dough thinly, cut into the desired shape, and bake in the oven at 392°F for 15 minutes.
