Ingredients for Whole Grain Buckwheat Shortcrust Pastry
- 2 cups buckwheat flour (whole grain)
- 1 egg
- 2 teaspoons gluten-free baking powder
- 6 tbsp butter (or alternatively 5 tbsp coconut oil)
- 3 tbsp water
- 1/4 cup stevia
- 1 tbsp lemon zest (grated)

Preparation of Whole Grain Buckwheat Shortcrust Pastry
Start the preparation by placing the flour, baking powder, butter, and stevia in the food processor and run it for 10 seconds to make the mixture more uniform.
Now add the egg, water, and grated lemon zest, run the food processor for 1/2 minutes and voila, the dough is almost ready!
Pour the buckwheat shortcrust pastry onto a slightly floured surface, shape it into a dough ball with your hands (it might crumble slightly at first, but by handling it for a few seconds, it will compact), the shortcrust pastry is now ready.
If you want to use it immediately, proceed to roll it out gently with a rolling pin, or if you want to use it later, wrap it in plastic wrap and let it rest in the fridge where you can store it for up to 2/3 days.
NOTICE: if stored in the fridge, take it out at least 30/40 minutes before using it; if you handle it too cold, it will break.
Tips
For baking cookies, roll the dough thinly, cut into the desired shape, and bake at 392°F for 15 minutes. For tarts, 356°F for 20/25 minutes.
