Ingredients for Whole Grain Buckwheat Shortcrust Pastry

  • 2 cups buckwheat flour (whole grain)
  • 1 egg
  • 2 teaspoons gluten-free baking powder
  • 6 tbsp butter (or alternatively 5 tbsp coconut oil)
  • 3 tbsp water
  • 1/4 cup stevia
  • 1 tbsp lemon zest (grated)

Preparation of Whole Grain Buckwheat Shortcrust Pastry

  • Start the preparation by placing the flour, baking powder, butter, and stevia in the food processor and run it for 10 seconds to make the mixture more uniform.

  • Now add the egg, water, and grated lemon zest, run the food processor for 1/2 minutes and voila, the dough is almost ready!

  • Pour the buckwheat shortcrust pastry onto a slightly floured surface, shape it into a dough ball with your hands (it might crumble slightly at first, but by handling it for a few seconds, it will compact), the shortcrust pastry is now ready.

  • If you want to use it immediately, proceed to roll it out gently with a rolling pin, or if you want to use it later, wrap it in plastic wrap and let it rest in the fridge where you can store it for up to 2/3 days.

  • NOTICE: if stored in the fridge, take it out at least 30/40 minutes before using it; if you handle it too cold, it will break.

Tips

For baking cookies, roll the dough thinly, cut into the desired shape, and bake at 392°F for 15 minutes. For tarts, 356°F for 20/25 minutes.
