Whole Wheat Bread

Ingredients to make delicious and easy whole wheat bread!

  • 4 1/4 cups whole wheat flour (plus extra for the work surface)
  • 1 1/2 cups water (at room temperature)
  • 2 tbsps extra virgin olive oil
  • 2 tsps fine salt
  • 1 pinch sugar
  • 1 packet dry yeast

Whole Wheat Bread Preparation and Baking

  • Weigh the ingredients and place them in the stand mixer bowl in this order: flour, salt and quick mix, sugar, yeast, water and oil.

  • Attach the dough hook to the stand mixer and run it at speed 2 for 12 minutes, then turn the dough out onto a floured work surface and shape it into a ball.

  • Place the dough in the bowl and cover with plastic wrap, place in the turned-off and closed oven to rise until doubled (about 3/4 hours depending on external temperatures).

  • Once the dough has doubled, place it on the work surface, work it quickly giving it the shape of a loaf and place it on the oven tray with parchment paper, then again in the closed and turned-off oven to rise until doubled.

  • Once the whole wheat bread has doubled in volume, remove the tray from the oven and preheat it to 428°F, once at temperature, make a lengthwise cut on the bread surface (with the appropriate tool) and bake, let cook for 35/40 minutes, at the end of cooking the bread should be golden on the surface.

  • Once the whole wheat bread is well cooked, remove it from the oven and let it cool completely on a rack before cutting it.
