Advice for Hand Kneading
If you don’t have (or can’t use) a stand mixer, proceed as follows: take a large bowl and add the ingredients in the order described in the steps above (the order of adding ingredients doesn’t change whether by hand or with a stand mixer), give it a quick stir with a spoon and let it rest for 5 minutes (this allows the semolina to absorb the water, resulting in a soft and pliable dough), then transfer the dough onto a floured work surface and knead until you get a firm and smooth dough without lumps, then form a ball and let it rise in a bowl, from here on proceed as per the instructions above.
