Ingredients for Yogurt Rolls with Raisins
- 4 cups all-purpose flour
- 1 cup sugar
- 5.3 oz lactose-free butter
- 3.5 oz raisins
- 3.5 oz 2% fat Greek yogurt (lactose-free)
- 3.5 oz lactose-free milk
- 2 eggs (medium)
- 0.35 oz fresh yeast
- 1.4 oz sugar
- 0.35 oz lactose-free milk

Preparation
In a bowl, mix the flour with the sugar (the dry ingredients).
In another bowl, mix the eggs, yogurt, milk, and melted butter (cooled), mix well.
Add the yeast to the liquid mixture by crumbling it, mix until well dissolved.
Add the liquid mixture to the flour with sugar, mix with a spoon, and once it starts to bind, transfer it to the pastry board.
Now add the raisins and knead (help yourself with a little flour if needed) until you get a compact dough, form a ball and place it in a bowl covered with wrap to rise until doubled (4/5 hours approx).
Once risen, take back the dough, divide it into 8 equal parts, form sausages and roll them to form the rolls.
Place the rolls to rise on the oven tray (lined with parchment paper) for another 4 hours (approx).
When it’s time to bake them (they will be nicely risen and plump), remove the tray from the oven, preheat it to 392°F (200°C) and bake when it’s at temperature. Before baking, brush the rolls with milk and sprinkle with sugar, bake for 25 minutes.

Oven: I use a static electric oven. Storage: you can store yogurt rolls with raisins in a freezer bag so they remain soft. You can warm them up a few minutes in the oven placing them on a tray with parchment paper before consuming them.
What can I substitute raisins with?
You can substitute the raisins with an equal amount of chopped and toasted walnuts or the same amount of dark or milk chocolate pieces.
