Ingredients for Yogurt Swirls with Raisins

  • 4 cups all-purpose flour
  • 1 cup sugar
  • 2/3 cup lactose-free butter
  • 3/4 cup raisins
  • 1/2 cup 2% fat Greek yogurt (lactose-free)
  • 1/4 cup lactose-free milk
  • 2 eggs (medium)
  • 2 tsp fresh yeast
  • 2 tbsp sugar
  • 2 tsp lactose-free milk

Preparation

  • In a bowl, mix the flour with the sugar (the dry ingredients).

  • In another bowl, mix the eggs, yogurt, milk, and melted butter (cooled slightly), mix well.

  • Add the yeast to the liquid mixture by crumbling it, stir until well dissolved.

  • Combine the liquid mixture with the flour and sugar, stir with a spoon, and as soon as it firms, transfer to the kneading board.

  • Now add the raisins and knead (using a little flour if needed) until you get a compact dough, form a ball, and put it in a bowl covered with plastic wrap to rise until doubled (about 4/5 hours).

  • Once risen, take the dough, divide it into 8 equal parts, form into ropes, and roll them to form the swirls.

  • Place the swirls to rise on the baking sheet (lined with parchment paper) for another 4 hours (approximately).

  • When it’s time to bake them (they will be nicely risen and puffed), take the baking sheet out of the oven, preheat it to 392°F (200°C), and bake once at temperature. Before baking, brush the swirls with milk and sprinkle with sugar, bake for 25 minutes.

Oven: I use a static electric oven. Storage: you can store the yogurt swirls with raisins in a freezer bag to keep them soft. You can warm them a few minutes in the oven on a baking pan with parchment paper before consuming.

  • What can I substitute for the raisins?

    You can substitute the raisins with an equal amount of chopped toasted walnuts or the same amount of dark or milk chocolate pieces.
