Ingredients for Zucchini Puff Pastry Roses
- 1 roll puff pastry (rectangular)
- 1 1/2 zucchini
- 1 to taste salt
- 1 to taste freshly ground pepper (I use a mixed grain variety)
- 1 tbsp extra virgin olive oil

Preparation of Zucchini Puff Pastry Roses
Unroll the puff pastry. Cut 6 strips along the long side using the pastry cutter.
Add a pinch of salt, some pepper, and a drizzle of olive oil to each strip.
Clean, wash, and finely slice the zucchini. Place the zucchini slices on top of the puff pastry strips, letting them protrude about 1/4 inch from the edge.
Roll from the narrow side and place the roses in the muffin tin (or alternatively in disposable molds), being careful to slightly press and seal the closing edge.
Preheat the oven to 480°F and bake in the hot oven for about 40-45 minutes. Check the cooking time based on your oven. Once they are golden, remove the roses from the oven and let them cool or warm before serving. Enjoy your meal!
