APRICOT AND CHOCOLATE CAKE

The apricot and chocolate cake is one of those soft and delicious desserts that I particularly love in the summer. It takes just a few minutes to prepare, and at my house, it has become the favorite cake for dinners with friends, which I usually serve with a scoop of vanilla ice cream.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3 1/2 tbsp butter
  • 2 eggs
  • 3/4 cup sugar
  • 1 3/4 oz 70% dark chocolate
  • 1/3 cup unsweetened cocoa powder
  • 10 1/2 oz apricots (after removing pits)
  • 1 packet baking powder
  • 1 cup milk
  • 9 oz apricots (after removing pits)
  • sugar
  • butter and unsweetened cocoa powder (for the pan)

Tools

  • Cake Pan 8-inch diameter

Steps

  • Melt the dark chocolate with the butter in a double boiler. Let it cool.
    In the bowl, beat the eggs with the sugar using the electric whisk until you have a light and fluffy mixture. Gradually pour in the milk while continuing to beat. Add the melted chocolate mixed with butter, unsweetened cocoa powder, and sifted flour with baking powder. Beat with the whisk until you have a very smooth and homogeneous mixture.

  • Cut the apricots into pieces, place them in the cake mixture, and carefully mix with a spatula

  • Cut the apricots needed for garnishing the cake in half. Remove the pit and roll each in granulated sugar, so they won’t sink during baking.

  • Butter and dust with unsweetened cocoa powder a springform pan with an 8-inch diameter; I use this from Tescoma.
    Pour the cake mixture into it, decorate with the apricots on top, cut side up. Bake in a preheated static oven at 350°F for about 40-45 minutes. Before removing, do the toothpick test; if it comes out clean, turn off the oven and allow it to cool completely before removing from the pan and serving.
