- 3.5 tbsp extra virgin olive oil

Steps
Peel the avocado with the peeler, cut in half and remove the pit
Slice the flesh
In the food processor, put the avocado pieces, pour in the extra virgin olive oil and the lime juice and zest. Adjust with a pinch of salt and pepper
Blend very quickly to obtain a compact and fluffy mayonnaise. Transfer the avocado mayonnaise into the bowl and let it rest in the refrigerator until ready to serve. Enjoy your meal!
