The baked meatballs and squash are a complete and tasty main course, but above all light.
They are quick to prepare and become that tasty idea for a family dinner.

Ingredients
- 14 oz Mixed ground meat
- 1 egg
- 1 stale bread roll
- 1/4 cup milk
- 2 cloves garlic
- 4 oz Grana Padano cheese, grated
- 1 tbsp chopped parsley
- 2 sprigs rosemary
- 14 oz cleaned squash
- salt
- pepper
- 1 pinch nutmeg
- extra virgin olive oil
Steps
Place the ground meat in the bowl with the egg, 80 grams of Grana Padano cheese, grated, two tablespoons of breadcrumbs, salt, the bread roll soaked in milk and well squeezed, the chopped garlic, and parsley. Adjust with salt, pepper, and a pinch of nutmeg.
Work the mixture for a long time to make it well blended. Shape into small meatballs and roll each in breadcrumbs. Let the meatballs rest for 30 minutes in the refrigerator.
Clean the squash and cut it into cubes all the same size.
Place the squash cubes in the bowl with the remaining Grana Padano, chopped garlic with rosemary, salt, pepper, and a drizzle of oil. Mix carefully.
Pour a drizzle of oil over the bottom of the baking dish lined with parchment paper, add the squash and meatballs, and cook in a static oven at 356°F for about 40 minutes, shaking the pan halfway through cooking, and cook until the dish is golden.
