The Bruschette alla Norma are a variation of the famous Sicilian pasta of the same name, which I thought of creating for you, for your summer dinners or for aperitifs with friends.

Like the pasta alla Norma, the bruschette are also prepared with tomato sauce, fried eggplants, salted ricotta, and basil, then placed on slices of toasted homemade bread, a true delight that you absolutely must try!

  • 3 slices rustic bread
  • 1 medium eggplant
  • 9 oz peeled tomatoes
  • 1 sprig basil
  • 2 cloves garlic
  • salted ricotta
  • salt
  • pepper
  • peanut oil

Preparation of Bruschette alla Norma

  • If you have extra time and want to prepare unbeatable Bruschette alla Norma, I recommend following my recipe here on how to make delicious homemade bread with few and simple steps.

  • Wash and trim the eggplant, then cut it into small cubes

  • Fry the eggplants in abundant seed oil at a temperature of 340°F

  • When they are slightly golden, remove them and place them on a plate lined with absorbent paper to dry

  • Blend the peeled tomatoes with an immersion blender. Peel the garlic clove and place it in a pan with a drizzle of oil, add the tomato pulp, and continue cooking for 10-15 minutes until the sauce starts to thicken. Adjust with salt, and a few basil leaves

  • Grill the bread on the hot grill, when it is ready rub the peeled garlic clove on the toasted bread slices. Place the slices on the serving plate, add the tomato, fried eggplants, decorate with grated salted ricotta and some basil leaves. Serve immediately and enjoy your meal!
