Ingredients

  • 14 oz Brussels sprouts
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon breadcrumbs
  • 3 tablespoons extra virgin olive oil
  • salt
  • pepper

  • Parchment paper
  • Bowl

Preparation of Brussels Sprout Fritters

  • Clean the Brussels sprouts by removing the outer leaves and cutting off the tougher part at the base

  • Blanch the Brussels sprouts for 10 minutes in salted water. Drain and place them on a towel to dry, removing excess liquid, and let them cool

  • Place the Brussels sprouts in the bowl with 2 tablespoons of Parmesan, a pinch of salt and pepper, and the extra virgin olive oil

  • Mix carefully until the ingredients are well combined

  • Place the Brussels sprouts on a baking tray lined with parchment paper and flatten each with the bottom of a glass to form fritters. If you want to see how I did it, watch here the video recipe from my Instagram profile!

  • Sprinkle the Brussels sprouts with Parmesan and breadcrumbs and bake in the oven at 355°F for about 6 minutes until golden. Serve immediately with tzatziki sauce and enjoy your meal!
