CHERRY PIE – American Cherry Pie

The cherry pie is an American cherry pie, consisting of two layers of crisp and crunchy shortcrust pastry, filled with an incredibly delicious filling enriched with lots of cherries.

A dessert that also became famous in Italy during the broadcast of Twin Peaks, where the protagonist, Agent Dale Cooper, was very fond of it and used to eat a slice at the local tavern, and who can blame him after all!

Ingredients

  • 3 1/2 cups flour
  • 1 cup butter
  • 1 cup cold water
  • 1 pinch salt
  • 1 3/4 lbs cherries
  • 3 tbsps brown sugar
  • 3 tbsps cornstarch
  • 1 tbsp lemon juice
  • 2 tsps vanilla extract
  • 1 egg (for brushing)
  • brown sugar

Preparation of the cherry pie

  • In the bowl, place the flour with the cold butter cut into pieces and a pinch of salt. Knead with your hands until you reach a sandy consistency. Pour the cold water in a stream and continue to knead until you have obtained a compact dough. Wrap it in plastic wrap and let it rest in the refrigerator for an hour

  • Pit the cherries, place them in the bowl with the cornstarch, brown sugar, lemon juice, and vanilla extract. Mix carefully with the spoon and let it rest in the bowl for 30 minutes

  • Divide the dough into two equal parts and roll them out into two discs a little larger than the size of the pie dish, on the floured work surface

  • Butter and flour the 9-inch diameter mold. Lay the first disc on the bottom of the pie dish and along the edges

  • Remove the excess pastry along the edges

  • Pour the cherries inside and level with the back of the spoon

  • Lay the second disc of shortcrust pastry on top, cut the edges with the knife, and seal with the first disc by pinching the edges. Make cuts in the center with a sharp knife

  • Brush the surface with the beaten egg

  • Finally, sprinkle with brown sugar. Bake in a preheated oven at 375°F for about 30-35 minutes until golden. Remove from the oven and let cool at room temperature before serving. Enjoy!
