Chicken with mushrooms is a reinterpretation, but not too much, of the legendary eggplant with mushrooms, a typical dish of the Campania tradition, made of eggplants and tomatoes and usually served as a side dish.

Ingredients

  • 1.1 lbs chicken breast
  • 2 large black oval eggplants (Large)
  • 3 vine tomatoes
  • 1/4 cup dry white wine
  • 2 sprigs basil
  • salt
  • pepper
  • extra virgin olive oil
  • 2 cloves garlic

Tools

  • Pan
  • Cutting board

Steps

  • Wash the eggplants, trim them, and cut into cubes

  • Pour the oil into the pan and add the garlic cloves, followed by the eggplants. Cook for about 10 minutes, stirring occasionally

  • Remove the garlic cloves, add the diced tomatoes, and season with salt, pepper, and a sprig of basil. Cover with a lid and continue cooking for another 5 minutes

  • Now that our eggplants are ready, let’s focus on the chicken. But first, transfer the vegetables to a plate and set the pan aside

  • First, cut the chicken into cubes and flour it. Add a drizzle of oil to the pan where you cooked the vegetables and place the chicken in

  • Brown the meat on all sides

  • Deglaze with white wine and continue cooking until the meat is tender. Season with salt and pepper. When the meat is cooked, add the vegetables you set aside, some fresh basil, mix carefully, and serve immediately. Enjoy your meal!
