PANTESCA SALAD

Pantesca salad is a fragrant dish with a Mediterranean taste, originating from the wonderful island of Pantelleria.

It consists of a base of boiled potatoes, enriched with cherry tomatoes, Pantelleria capers, olives, onions, and flavored with basil and oregano. A real treat for your palate!

Ingredients

  • 1 lb potatoes
  • 1 red onion
  • 10.5 oz cherry tomatoes
  • 2 oz olives
  • 1 oz salted capers
  • 1.5 tbsps white wine vinegar
  • to taste basil
  • to taste oregano
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Boil the potatoes with their skins for 30-35 minutes. Drain, let them cool, peel, and cut into chunks

  • Slice the onion into thin rings

  • Place the sliced onions in a bowl, drizzle with vinegar, mix, and let rest for 30 minutes

  • After the time has passed, put the potatoes and onions in the bowl

  • Add the halved cherry tomatoes, olives, desalted capers, and season with oregano, basil, salt, pepper, and extra virgin olive oil. Mix carefully and let it rest in the refrigerator until it’s time to serve. Enjoy your meal!
