Today I want to show you pasta with red radicchio and sausage, a really tasty and creamy first course but without cream. An old family recipe that I often prepare for my family during family lunches.

Ingredients
- 14 oz reginette
- 2 heads red radicchio
- 10.5 oz sausage
- Half onion
- 2 cups milk
- 1 tbsp flour
- 1 glass dry white wine
- salt
- pepper
- 3 tbsps extra virgin olive oil
- chopped parsley

Steps
Clean the red radicchio and cut into julienne strips. Place in a frying pan with the chopped onion and a drizzle of oil.
Cook for a minute, deglaze with half a glass of white wine and let braise
Pour the milk into the pan with the red radicchio, add the flour, stir with a spoon, and continue cooking until the sauce becomes creamy. Season with salt, pepper, and fresh chopped parsley.
Remove the sausage from the casing and place in another pan. Deglaze with white wine, and using a wooden spoon, crumble until you get small pieces. Sauté well, turn off the heat, and set aside
Cook the pasta in plenty of salted water
Lift it with a pasta fork and pour it into the pan with the sauce
Add the sausage. Toss the pasta over high heat for a couple of minutes, stirring often, and serve immediately. Enjoy your meal!
