Have you ever had leftover polenta from a dinner? Today I want to show you how to prepare polenta balls, a truly delicious appetizer with leftover polenta enriched with pecorino romano.
A delicious finger food made with very few and simple ingredients.

Ingredients
- 10.5 oz cooked polenta
- 3 tbsps pecorino romano
- 3 tbsps breadcrumbs
- 1 egg
- pepper
- peanut oil (for frying)

- Potato masher
Steps
Cut the polenta into pieces and place in the potato masher. Collect the “pulp” in the bowl
Add the egg, pecorino romano, breadcrumbs, and a pinch of pepper. Do not add salt, as the polenta already contains it and the pecorino is very salty
Mix carefully until a homogeneous and compact mixture forms, if it’s too soft add another tablespoon of breadcrumbs
Form balls and roll each in the breadcrumbs
Heat the oil to a temperature of 320°F in a high-sided saucepan. Submerge a few balls at a time and fry until golden. Remove with a slotted spoon and place on a plate lined with paper towels. Serve immediately and enjoy your meal!
