Ingredients
- 1 sheet puff pastry (rectangular)
- 1 oval black eggplant
- 3.4 oz tomato sauce
- 7 oz smoked cheese
- 4 tbsps Grana Padano cheese, grated
- 4 leaves basil
- 1 egg yolk
- salt
- sesame seeds

Steps
Cut the eggplant into slices about 1/4 inch thick. Place them in the bowl with cold water and a pinch of coarse salt. Let them rest for 30 minutes. After that, rinse thoroughly, pat dry with paper towels and grill on the hot plate. Place them on a plate and season with a pinch of salt.
In the bowl, pour the tomato sauce, add a tablespoon of oil, some basil leaves, minced garlic clove, adjust with a small pinch of salt and mix carefully
Unroll the puff pastry sheet onto a sheet of parchment paper. Spread the tomato sauce keeping the edges free
add the grilled eggplant slices
then place the sliced smoked cheese and sprinkle with grated Grana Padano cheese
With the help of the parchment paper, roll the pastry up from the longer side
Place the roll on a baking tray lined with parchment paper. Separately, beat the egg yolk with a pinch of salt, brush the roll and decorate with sesame seeds as desired.
Bake in a preheated oven at 356°F for about 25 minutes. Remove from oven and let cool before slicing. Enjoy your meal!
