RICE SALAD WITH HAM AND MELON

Rice salad with ham and melon is a great one-dish meal to serve cold, combining two of my favorite summer foods. A tasty yet original idea if you want to serve your rice inside melon shells during a dinner with friends.

Ingredients

  • 1.5 cups salad rice
  • 2 cantaloupe melons
  • 7 oz prosciutto
  • 7 oz primosale cheese
  • 1 bunch basil
  • salt
  • pepper
  • extra virgin olive oil

Tools

  • Cutting board
  • Melon baller

Steps

  • Rinse the rice thoroughly under running water in a colander to remove the starch. Cook the rice in salted water, drain, put it in the bowl with a drizzle of oil, stir, and let it cool.

  • Cut the melons in half, remove the seeds with a spoon, and use the melon baller to create small balls.

  • Cut the prosciutto into strips.

  • Now add the diced primosale cheese, melon, prosciutto, and torn basil leaves to the rice. Season with a pinch of pepper and a drizzle of oil, mix carefully, and let rest in the refrigerator for at least an hour before serving. Enjoy your meal!
