POTATO FRITTERS

APPLE FRITTERS

Ingredients

  • 1 egg
  • 7 oz ricotta
  • 1/4 cup sugar
  • 3/4 cup flour
  • 1/3 cup raisins
  • 2 tbsps milk
  • 1 packet baking powder
  • 1 lemon zest
  • 1 quart peanut oil
  • powdered sugar

Tools

Steps

  • Soak the raisins for 15 minutes in warm water. In the bowl, crack the egg, add the sugar and the grated lemon zest, and mix with the whisk until well combined. Then add the sifted ricotta and continue mixing. To make this easier, you can use a stand mixer; I use this and it works great!

  • Add the sifted flour with baking powder, milk, and continue mixing with the whisk until you get a smooth, lump-free consistency.

  • Squeeze the soaked raisins well and add them to the mixture. Gently fold them in with a spatula.

  • Heat the seed oil to a temperature of 320°F. Using two teaspoons, drop small amounts of the batter at a time. During cooking, the fritters will puff up a lot until they become golden and puffed balls. Remove them and place them on a tray lined with absorbent paper, sprinkle with powdered sugar, and enjoy!

    If you want a lighter cooking method, I recommend using an air fryer (I use this and it’s fantastic!), Line the basket with a sheet of parchment paper, space the fritters well apart, and bake at 340°F for about 7-8 minutes. Repeat this process until you have used up all the batter.
