SMOKY GNOCCHI

Smoky gnocchi is a very tasty first course, composed of a sauce based on tomato, bacon, and smoked provola, hence the name ‘smoky’.

Ingredients

  • 1.1 lbs potato gnocchi
  • 1.7 cups tomato passata
  • 1 clove garlic
  • 7.8 oz smoked bacon
  • 8.8 oz smoked provola
  • salt
  • pepper
  • oregano
  • extra virgin olive oil
  • Half glass dry white wine

Steps

  • In a pan, add a drizzle of oil with the garlic clove in its skin and sliced smoked bacon. Cook over high heat, stirring frequently, until the bacon is browned.

  • Deglaze with the white wine and let it evaporate

  • Pour in the tomato passata, lower the heat, and continue cooking for another 20-25 minutes. Season with salt, pepper, and oregano to taste. If you don’t like oregano, you can replace it with some basil leaves.

  • Cook the gnocchi in a pot of boiling salted water. Drain them with a slotted spoon once they float to the surface. Add them to the pan with the tomato sauce and add the diced smoked provola.

  • Toss over high heat until the provola is well combined with the sauce and gnocchi. Serve immediately and enjoy your meal!
