Stuffed zucchini with potatoes and sausage is a very tasty and easy-to-make main dish, which I often prepare for my family, who love this wonderful summer vegetable.

Ingredients
- 4 large zucchinis
- 1 lb lbs potatoes
- 1 sausage (250 grams)
- 1.75 oz Grana Padano DOP
- 1 egg
- salt
- 1 sprig rosemary
- pepper
- extra virgin olive oil

Steps
Boil the zucchinis in plenty of salted boiling water for 10 minutes, drain them, and stop the cooking under cold running water. Cut each zucchini lengthwise.
Scoop out the flesh with a melon baller. Chop the flesh and gather it in the bowl.
Remove the casing from the sausage and cut into pieces. Put them in a pan. Turn on the heat and start cooking the sausage, deglaze with the wine, and using a wooden spoon, crumble until you get small roasted pieces. Turn off the heat and set aside.
Place the boiled potatoes mashed with a potato masher in the bowl, the chopped zucchini flesh, 30 grams of grated Grana Padano, the egg, the sausage, season with salt and pepper, and mix carefully.
Stuff each top with the mixture just prepared
Lay the zucchinis on the baking dish drizzled with a little olive oil, sprinkle with the remaining Grana Padano, drizzle with a little extra virgin olive oil, and bake in a preheated oven at 356°F for about 25 minutes.
