VEGETABLE AND FETA SKEWERS

The vegetable and feta skewers are a healthy and wholesome idea for a summer main dish that can be eaten freshly prepared as a main dish, but can also be served cold during an appetizer.

Ingredients

  • 9 oz feta
  • 1 zucchini (Large)
  • 250 cherry tomatoes
  • 1 clove garlic
  • basil
  • dried oregano
  • 2 tbsps extra virgin olive oil
  • salt
  • pepper

Tools

  • 6 Skewers
  • Baking dish

Preparation of vegetable and feta skewers

  • Wash the vegetables, then slice the zucchini into rounds and cut the feta into cubes

  • Peel the garlic clove and finely chop it with the basil leaves. Place the mixture in a bowl with olive oil, salt, and pepper and mix.

  • Thread the skewer alternating cherry tomatoes with zucchini rounds and feta

  • Drizzle a little olive oil on the bottom of the baking dish, arrange the skewers on top. Brush with the prepared mixture, sprinkle with dried oregano, and bake at 350°F for about 20-25 minutes.
