The vegetable baskets I am about to show you are a delicious and beautiful appetizer. They can be prepared a few hours in advance and served to your guests during the aperitif. In short, an easy idea to impress your friends in a short time and with few ingredients!

Ingredients
- 1 roll whole wheat puff pastry
- 1 eggplant
- 2 zucchini
- 1 tomato
- 1 clove garlic
- 1 sprig basil
- salt
- pepper
- extra virgin olive oil
- 1 mozzarella
- 3 tablespoons Grana Padano DOP
- 1 egg

- 1 Pan
Steps
Wash and trim the vegetables, then cut them all into cubes. Heat a drizzle of oil in a pan with the garlic clove, add the vegetables and cook for about 10 minutes, stirring frequently, season with salt and basil leaves. Turn off the heat and let cool
Put the now cold vegetables in the bowl with the mozzarella cut into cubes and grated Grana Padano, the egg, and mix carefully. In the meantime, unroll the puff pastry roll on its baking paper and, with the help of a pastry cutter, cut out six discs slightly larger than each muffin tin.
Brush the tin with a drizzle of oil and line the base and along the edges with the puff pastry discs. Pour the prepared mixture inside, sprinkle with some grated Grana Padano, and bake in a preheated oven at 350°F for about 15-18 minutes. When they are golden, remove from the oven and let cool slightly before removing from the muffin tin. Enjoy your meal!
