Chicken strips with curry and coconut milk with Basmati rice, a single dish that is truly delicious, although by replacing the rice with a side dish, it can be served as a main course. I like curry and I like coconut milk, could I not like this dish? And in fact, I prepare it often, especially during the winter season. I also tell you that some time ago, not having coconut milk at home, I tried to make this recipe by replacing the coconut milk with fresh liquid cream (but cooking cream also works) and the result was excellent!

Ingredients for Chicken Strips with Curry and Coconut Milk
- 1.3 lbs chicken breast (sliced)
- 1/2 onion
- 1 carrot
- 1 1/4 cups coconut milk
- to taste curry (I use 2 teaspoons)
- 3 tbsps flour (I use remilled semolina)
- to taste extra virgin olive oil
- to taste salt
- 1 bunch chopped parsley (optional)
- 1 1/4 cups Basmati rice
- 2 cups water
- to taste salt
Preparation of CHICKEN STRIPS WITH CURRY AND COCONUT MILK
Scrape the carrot, peel the onion, and chop them.
Sauté the onion and carrot in a pan with a drizzle of oil for about 3 minutes, then remove from the pan and set aside.
Cut the chicken slices into strips, place them in a plastic food bag, add the flour, seal the bag, and shake it to coat the chicken strips evenly with flour.
In the same pan you used for the sauté, heat a drizzle of oil and then add the floured chicken strips; brown them for a few minutes, turning them over.
Add the sautéed onion and carrot, coconut milk, about 2/3 cup of water, curry, and a pinch of salt; mix, cover, and let it cook for about 15 minutes, stirring occasionally. If necessary, during cooking, you can add a few tablespoons of hot water, but don’t overdo it. At the end of cooking, if you like, you can add a bunch of chopped parsley.

When everything is ready, plate the chicken strips with the Basmati rice and serve hot.
Notes
If you don’t have coconut milk, try replacing it with fresh liquid cream or cooking cream.
