Preparation CINNAMON FRITTERS

  • Sift together the flour, cinnamon, and baking powder into a bowl. Add the sugar, egg, milk, and a pinch of salt. Mix everything, then pour the mixture onto a floured surface and knead well.

    Form a ball, enclose it in a plastic food bag, or wrap it in a sheet of plastic wrap, and let it rest in the refrigerator for at least 30 minutes.

  • In due time, take the dough from the fridge and roll it out with a rolling pin on a floured surface until it reaches a thickness of about 1/8 inch. Cut the dough with a fluted wheel into pieces about 3/4 x 2 inches, then make small cuts in the center.

  • Heat the peanut oil in a pan and fry the fritters, a few at a time, until they have reached a nice golden color. As they are ready, remove them from the pan with a slotted spoon and place them on some sheets of absorbent paper to remove excess oil.

    When you have finished frying, arrange the fritters in layers on a tray and sprinkle them with a mix of powdered sugar and ground cinnamon.
