Ingredients for Coffee Cookies with Almonds
- 2 cups all-purpose flour
- 1/2 cup sugar
- 5 tbsp butter (at room temperature)
- 1 cup almonds (toasted)
- 1/3 cup coffee (prepared with moka or espresso machine)
- 1 egg (medium)
- 1 tsp baking powder
- 1 pinch salt

Preparation COFFEE COOKIES WITH ALMONDS
Take the butter out of the fridge in advance and let it soften at room temperature.
Place the almonds in a food bag and coarsely chop them using a meat tenderizer; set them aside. (If you haven’t bought already toasted almonds, read how to toast almonds).
Put the butter, at room temperature, and the sugar in a bowl. Work them with a wooden spoon or a spatula until you get a creamy mixture.
Add the egg and a pinch of salt; mix.
Add the coffee and stir, then add the flour in 2-3 parts and the baking powder (I previously sifted both the flour and the baking powder); mix.
Finally, incorporate the chopped almonds, always stirring with a spoon or spatula.
Cover the bowl and place it in the fridge for about an hour.
After the necessary time, take the dough, take pieces with a spoon, and form balls the size of walnuts (to make your work easier, wet your hands with a little water). As you go, place them on a baking sheet lined with parchment paper and flatten them slightly.
Bake in a preheated static oven at 320°F or a fan oven at 300°F for about 20 minutes (I use a fan oven).
Remove the cookies from the oven and let them cool before removing them from the baking sheet.
