Today I present the recipe to make Creamy Banana Liqueur at home, commonly known as bananino, not to be confused with the regular banana liqueur made without cream or milk. It is a not very alcoholic liqueur, particularly suitable to serve at the end of a meal as a digestif. The preparation is very simple, and after the maceration days, it only takes 10 minutes to mix all the ingredients and bottle your liqueur, which must be stored in the refrigerator. In the summer, you can also use it to top ice cream, for example, cream ice cream. Moreover, it can be a nice gift idea for Christmas or other occasions.

- 3 bananas (large or 4 small)
- 15.8 oz pure alcohol (at 96°)
- 1.2 cups whole milk
- 0.8 cups fresh liquid cream
- 1.6 cups sugar

Preparation CREME BANANA LIQUEUR
To prepare the bananino choose very ripe bananas so they release more aroma once infused in alcohol.
Peel the bananas and cut them into slices; you will need about 400 g of peeled bananas. Place them in a glass jar and add the alcohol. Close the jar with the lid and let it macerate for 7 days in a dark place away from heat sources (for example inside the pantry). Once or twice a day, shake the container to facilitate the infusion process; you will see the liquid gradually become more yellow and the bananas darker.
After 7 days, prepare the syrup: place the milk, cream, and sugar in a saucepan, add the saffron, and heat until just before boiling, stirring constantly with a whisk. As soon as the liquid has almost reached boiling, the sugar will be completely dissolved, then remove from heat and let cool.
Strain the banana-flavored alcohol into a bowl, then filter it a second time by passing it through the strainer lined with a cheesecloth.
Add the milk and cream mixture and mix well.
Bottle the liqueur and store it in the refrigerator.
Let the creamy banana liqueur mature in the fridge for 10-15 days before enjoying it. During this phase, shake the bottle every 1-2 days.

FAQ
What is the saffron for?
Saffron slightly flavors the liqueur, but it mainly gives a nice yellow color. It is not necessary, and you can easily skip it.
Looking at the bottle, I noticed that the liqueur seems divided into two, a more liquid part and a more solid one, why?
Because the alcohol, which is lighter, tends to separate from the heavier part, it is normal. For this reason, it is recommended to shake the bottle vigorously both during the 10-15 days of maturation in the fridge and before serving.
