Ingredients for Cucumber Salad with Yogurt
- 2 lbs cucumbers
- 3.5 oz green olives (pitted)
- 3 tbsp plain natural yogurt
- 1 lemon juice
- 3 tbsp extra virgin olive oil
- to taste mint
- to taste oregano
- to taste salt
Preparation of CUCUMBER SALAD WITH YOGURT
Using a vegetable peeler, peel the cucumbers, trim them, and cut them in half lengthwise. Use a teaspoon or a knife to remove the seeds from the cucumbers and discard them.
Cut the cucumbers into pieces and place them in a bowl.
Dress the cucumbers with the extra virgin olive oil, the lemon juice, oregano, and salt. Mix well to distribute the dressing. Tear the fresh mint leaves with your fingers and add them to the cucumber salad; add the olives and yogurt and mix again.
Your cucumber salad with yogurt is ready to be served.
