Ingredients for Potato and Smoked Salmon Salad
- 2.2 lbs potatoes
- 8.8 oz smoked salmon
- 1.4 oz black olives (pitted)
- 1.4 oz green olives (pitted)
- 1 bunch parsley
- 1 lemon juice
- to taste extra virgin olive oil
- to taste salt
Preparation of POTATO AND SMOKED SALMON SALAD
Wash the potatoes, place them in a pot, cover with cold water and let them cook for about 30–35 minutes from the moment of boiling; cooking times depend on the size of the potatoes. To ensure they are cooked, you can pierce a few with a fork or a skewer. Drain and let them cool slightly, then peel and cut them into cubes.
Cut the olives into slices.
Cut the smoked salmon into pieces.
Wash and chop the parsley.
Combine the potatoes, olives, salmon, and parsley in a bowl. Dress with extra virgin olive oil and lemon juice; adjust the salt and mix everything well.
Your potato and smoked salmon dish is ready to be served.
Notes
You can store the smoked salmon and potato salad in the refrigerator, in an airtight container, for 1-2 days. Freezing is not recommended.
