Ingredients for the Summer Salad with Potatoes, Green Beans, and Mozzarella

  • 28 oz potatoes
  • 18 oz green beans
  • 18 oz tomatoes
  • 14 oz cherry-sized mozzarella balls
  • 3.5 oz green olives (pitted)
  • 1 Tropea red onion
  • to taste basil
  • to taste extra virgin olive oil
  • to taste white wine vinegar
  • to taste salt

Preparation of SUMMER SALAD WITH POTATOES, GREEN BEANS, AND MOZZARELLA

  • Place a pot full of water on the stove and bring it to a boil.

    Trim the green beans and remove any strings, cut them in half, then wash them and let them drain in a colander.

    As soon as the water boils, salt it and cook the green beans. Once they reach the desired level of doneness, drain them and let them cool slightly.

  • Meanwhile, wash the potatoes, put them in a pot, cover them with cold water, and boil for about 30 – 35 minutes after it starts boiling; cooking times depend on the size of the potatoes. To ensure they are done, prick a few with a fork or a skewer. Drain and let them cool slightly, then peel and dice them.

  • Peel the onion and slice it thinly, place it in a bowl and cover with cold water and a few tablespoons of vinegar; let soak for about 30 minutes, then drain.

    Wash the tomatoes and cut them into pieces.

    Slice the olives into rings.

  • Combine the potatoes, green beans, tomatoes, onion, and olives in a bowl. Season with salt, oil, and vinegar, and mix well. Finally, add the mozzarella balls and some torn basil leaves; mix gently again.

    Your Potatoes, Green Beans, and Mozzarella salad is ready to be served.

Notes

You can further enrich the salad by adding oil-packed or natural tuna.

You may also add a handful of black olives and/or canned corn.
