  • 1 lemon juice
  • 1 chili pepper
  • 0.4 cups extra-virgin olive oil
  • to taste oregano
  • to taste salt

How to Prepare the POTATO, PEA, AND OLIVE Side Dish

  • Wash the potatoes, place them in a pot, cover with cold water, and cook for about 30 – 35 minutes from the time it starts boiling; cooking times depend on the size of the potatoes. To be sure of the right degree of cooking, you can poke a few with the tines of a fork or a skewer stick. Drain them and let them cool slightly, then peel and cut into cubes.

  • Place a small pot of water on the stove. As soon as the water comes to a boil, salt it and blanch the peas for a few minutes, then drain and let them cool.

  • In a small bowl, mix well the extra-virgin olive oil, lemon juice, a pinch of salt, some sprinkles of oregano, and the chili pepper, seeds removed and chopped into small pieces.

  • Combine the potatoes, peas, and olives in a salad bowl; season with the oil and lemon juice mixture and mix everything gently.

Your potato, pea, and olive salad is ready to be served.
