Potatoes, peas, and olives, a side dish delicious, perfect for accompanying meat or fish dishes, but also eggs and cheese. I also added a nice hot chili, but if you don’t like it you can remove it, your salad will still be delicious.

Ingredients for the Potato, Pea, and Olive Side Dish
- 2.2 lbs potatoes
- 10.5 oz frozen peas
- 2.8 oz green olives (pitted)
- 1 lemon juice
- 1 chili pepper
- 0.4 cups extra-virgin olive oil
- to taste oregano
- to taste salt
How to Prepare the POTATO, PEA, AND OLIVE Side Dish
Wash the potatoes, place them in a pot, cover with cold water, and cook for about 30 – 35 minutes from the time it starts boiling; cooking times depend on the size of the potatoes. To be sure of the right degree of cooking, you can poke a few with the tines of a fork or a skewer stick. Drain them and let them cool slightly, then peel and cut into cubes.
Place a small pot of water on the stove. As soon as the water comes to a boil, salt it and blanch the peas for a few minutes, then drain and let them cool.
In a small bowl, mix well the extra-virgin olive oil, lemon juice, a pinch of salt, some sprinkles of oregano, and the chili pepper, seeds removed and chopped into small pieces.
Combine the potatoes, peas, and olives in a salad bowl; season with the oil and lemon juice mixture and mix everything gently.
Your potato, pea, and olive salad is ready to be served.
Notes
You can add a couple of sun-dried tomatoes in oil, chopped into small pieces.
You can replace the chili pepper with a few pinches of pepper.
You can replace lemon juice with white wine vinegar or apple cider vinegar.
You can replace green olives with black olives.
