Prince’s pasta, a very ancient Sicilian first course, delicious and easy to make. Why it’s called that, I never understood, but then again, often the name of some recipes is not clear unless you know the history of that specific dish, but it’s not always possible. What I know is that I really like this pasta, it’s made with ingredients that are very easy to find and that we almost always have at home. It prepares in a few minutes, especially if you use the mixer. I took a few more minutes because, faithful to tradition, I wanted to crush the herbs with the mortar.

Ingredients for Prince’s Pasta

  • 320 g pasta
  • 7 oz canned tuna in oil (drained weight)
  • 6 fillets anchovy in oil
  • 10 leaves mint
  • 1 bunch parsley (about 0.7 oz)
  • 1 clove garlic
  • 1 lemon zest (organic)
  • 1.4 oz breadcrumbs
  • 3 tbsp extra virgin olive oil
  • 1.8 oz almonds (toasted)
  • to taste salt
  • to taste pepper

Preparation of PRINCE’S PASTA

  • Wash the parsley and mint and dry them with a cloth. Peel the garlic clove. Place them in a mortar and grind them (alternatively, you can use a mixer).

    Toast the breadcrumbs in a pan with 1 tablespoon of extra virgin olive oil, stirring continuously to prevent it from burning.

  • Place the tuna and chopped anchovy fillets in a large bowl; mix with a fork, turning and crushing them to crumble the tuna well.

    Add the grated lemon zest (only the yellow part), the herb pesto, the toasted breadcrumbs, and 2 tablespoons of olive oil; mix everything.

    At this point, taste and, if necessary, adjust the salt. Finally, add a few pinches of pepper.

  • Chop the toasted almonds coarsely (if you haven’t bought pre-toasted almonds, read How to Toast Almonds). I put them in a food bag and crush them with a meat tenderizer.

    Cook the pasta in abundant salted water. Drain it, saving a part of the cooking water.

    Pour the pasta into the bowl with the dressing, add a ladle of pasta cooking water, and mix.

  • At this point, add the chopped almonds or distribute the pasta on plates and sprinkle with chopped almonds.

    Your Prince’s Pasta is ready to be served.
