If you notice the strawberries are not very sweet (it happens), add some extra powdered sugar to the cream, or sweeten the strawberries with a few teaspoons of sugar when blending them.
When melting the gelatin, you can replace the water with a sweet white wine or some limoncello liqueur.
The strawberry mousse can be stored in the refrigerator for 2 – 3 days, but I recommend decorating with strawberries just before serving.
