Ingredients
- 4 fillets fresh salmon (5 oz each)
- 2 Fuji apples
- 600 g potatoes
- 2 lemons
- 1 clove garlic
- 2 leaves sage
- 6 tablespoons extra virgin olive oil

Steps
Wash the apples, cut them in half, remove the core, and puree them with the lemon juice. Place the salmon fillets in a baking dish, season with a pinch of salt, and cover with the apple puree. Close the baking dish with the lid (if it has one) or cover with plastic wrap and refrigerate for six hours to rest. Meanwhile, wash and peel the potatoes, cut them into wedges, boil them in salted boiling water for five minutes, then drain them, place them on a baking tray with four tablespoons of oil, the sage, and the garlic. Bake at 392°F for twenty minutes. In a shallow saucepan, heat the oil and transfer the salmon fillets without the apple puree. If your salmon fillets have skin, place them skin-side down. Cook over low heat, occasionally pouring some hot oil over them. Turn them when they have reached a slightly white color and cook for another couple of minutes. Serve the salmon with the roasted potatoes.
