The apple mug cake is a soft, moist, delicious, and light treat that will transform your breakfast. It is made in five minutes and takes two to cook if you have a microwave oven. Let’s sum it up: easy, quick, eggless, a pinch of sugar, a few ingredients to mix, and it’s done. It couldn’t be better. If you want to make the apple mug cake more delicious, add some hazelnut spread after cooking.

Ingredients

  • 1/4 cup flour
  • 1 tsp brown sugar
  • 2 1/3 tbsp oat milk
  • 1 tbsp rice oil (or other seed oil of choice)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract (or vanillin)
  • to taste cinnamon
  • 2 slices apple, diced

Steps

  • In a small bowl and using a whisk, mix the flour, sugar, baking powder, oil, plant-based drink, cinnamon, and vanilla thoroughly to obtain a smooth and lump-free batter. Add the apple cut into small cubes (I had a small apple and used two slices, but if the apple is large, use just one), and mix to incorporate it into the batter. Grease and flour a mug or bowl suitable for microwave cooking (you can also use spray release) and pour in the batter. Cook in the microwave at maximum power (mine is 900 w) for two minutes. Serve the apple mug cake warm with a scoop of plain Greek yogurt.

Notes

Mug cakes cooked in the microwave should be eaten immediately. Do not store them because they dry out too much and become gummy.

If your microwave does not reach 900 w, cook at 500 w for three minutes but check the cooking and add thirty seconds at a time until it is done.

If you do not have a microwave, you can cook in an air fryer at 392 °F (200 °C) on the cake function for 8 minutes.
