The apple plumcake is a simple dessert, a delicious recipe for a snack full of memories. The first apple pie I remember is Maria’s, the red apple pie, the one that meant it was a celebration when my mom made it. Maria gave her the recipe, and the unmistakable butter aroma in the house was a sign that there was apple pie in the kitchen cabinet. So, a dessert with apples cannot be missing from time to time. An apple plumcake this time: soft, moist, sugary, and buttery just right, and happy snacking to everyone!

Ingredients

  • 2 medium eggs
  • 0.5 cups granulated sugar
  • 1 cups all-purpose flour
  • 0.5 cups soft butter
  • 2 tsp rum
  • 2.5 tsp baking powder
  • 3 apples
  • 1 lemon (untreated)
  • 2 tbsps granulated sugar
  • 1 apple
  • as needed granulated sugar
  • as needed butter

Steps

  • Peel the three apples, cut them into pieces, drizzle with lemon juice, add the 2 tablespoons of granulated sugar. Mix and set aside.

    In the bowl of a stand mixer or with an electric mixer, whip the soft butter, kept at room temperature, with the sugar, then incorporate the eggs, adding them one at a time. Add the sifted flour with the baking powder and mix until you get a smooth and homogeneous mixture. Add the apple pieces and the rum, then mix to combine everything.

    Pour the obtained mixture into a 26 cm plumcake pan lined with parchment paper or buttered and floured.

    Peel the remaining apple, cut it into thin slices and insert them into the batter. Sprinkle with a bit of granulated sugar, a few pats of butter, and bake in a static oven at 350 °F for 50 minutes.
