You can replace the pumpkin with carrots and proceed in the same way. You can add some nuts. You can omit the cinnamon if you really don’t like it, but in that case, the taste will be significantly affected. I tried to make the cakes with chocolate chips instead of cinnamon, but the batter is very liquid, so despite all possible precautions, the chips sank to the bottom and stuck to the mold, making it very difficult to extract the whole cakes. If you make muffins instead, use this mold, you can add chocolate chips, but do not mix them into the batter. Distribute the batter into the molds and add the chocolate chips on top. I used light brown sugar, but you can use raw sugar or simply white sugar.
