They are also ideal for bringing legumes to the table in “disguise” if you have kids who don’t like them, but also an alternative way to prepare them that is not the usual soup, broth, or large salad. Ingredients
- 1 cup cannellini beans (canned)
- 1/3 cup grated Parmesan cheese
- 1/2 cup chickpea flour
- 1 tbsp chopped parsley
- 3 tbsp extra virgin olive oil (plus more for cooking)

Steps
Rinse the beans under running water to remove all the canning liquid, drain them well, and transfer them to the food processor with the Parmesan, chickpea flour, parsley, salt, and oil. Blend well to obtain a smooth mixture. Transfer it to a bowl, grease your hands and form the burgers then coat them in breadcrumbs.
Place the burgers on the air fryer grill with the appropriate parchment paper, spray them with a little extra virgin olive oil on both sides, and cook them at 356°F for 15 minutes, turning them halfway through cooking. Let them cool for a few minutes before serving.
Notes
If you don’t have an air fryer, you can bake the bean burgers in the oven at 392°F for 15/20 minutes.
