Beans à la Bud Spencer

Ingredients

  • 2 cups canned borlotti beans
  • 2 sausages
  • 1.25 cups tomato pulp
  • 1/2 white onion
  • 1/2 cup white wine
  • 1 fresh chili pepper
  • 1 clove garlic
  • 2 leaves bay leaves
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste pepper

  • 1 Saucepan with low sides

Steps

  • Peel the onion and slice it thinly. Peel the garlic clove. In a low-sided saucepan, pour the tablespoon of oil and let the chopped onion and garlic clove sauté. Remove the casing from the sausages (I had some luganega in the fridge and used that, but classic sausage is better for this recipe), cut it into pieces, then transfer it to the saucepan and let it brown. Deglaze with the white wine. Add the beans drained from their liquid and rinsed under running water, the chili pepper (in the amount you prefer), the tomato pulp, and the bay leaves. Mix well and cook for fifteen minutes. Adjust salt and pepper only at the end of cooking and only if needed. Serve the beans hot.
